Pizza Sauce

Pizza sauce is one of the main ingredients used in making pizzas. It has all the Italian herbs that helps in enhancing the flavour. I learnt this recipe in my cooking class where I used tomato puree to make this recipe. But I made slight modification and used fresh tomatoes and found it to be better in taste. But it is always better to go for fresh tomato puree if you have less time. This sauce can be used in making pizza, calzones and even I made dosai pizza which tasted delicious. You can store this for 3 days.

Method 1

INGREDIENTS

Oil – 1/2 tbsp

Garlic – 4 flakes (minced)

Onion – 1 small size(finely chopped)

Tomatoes- 4

Chilli flakes – 1/2 tsp

Mixed Herbs – 1 tsp

Oregano – 1 tsp

Sugar – 1 tsp

Salt – 1/4 tsp

Chilli Powder – 1/4 tsp

  • Heat oil in a kadai and add chopped garlic. Saute until you get nice aroma.
  • Then add chopped onions and saute until they turn light brown in colour.
  • Add salt, oregano, mixed herbs, chilli flakes and mix well.
  • Grind the tomatoes and extract puree. Add this into the kadai.
  • Add sugar, chilli powder and water. Allow it to coo until it thickens.
  • Pizza sauce is ready to use.

Method 2

INGREDIENTS

Oil – 1/2 tbsp

Garlic – 4 flakes (minced)

Onion – 1 small size(finely chopped)

Chilli flakes – 1/2 tsp

Mixed Herbs – 1 tsp

Tomato Puree- 1/2 pkt

Sugar – 1 tsp

Salt – 1/4 tsp

Chilli Powder – 1/4 tsp

  • Heat oil in a pan and add minced garlic. Saute it in low flame until  you get the aroma.
  • Now add onion, mixed herbs, chilli flakes, tomato puree, salt and sugar.
  • Saute until it thickens. Turn off the stove and allow it to cool.
  • Allow it to cool.

Fajita

Fajita is a term used in Tex-Mex cuisine that is served with tacos or as a stuffing for quesadilla. Non vegetarians can add meat into the recipe but this is the vegetarian version of fajita.

INGREDIENTS

Green bell pepper – 1/4 (finely chopped)

Yellow bell pepper – 1/4 (finely chopped)

Red bell pepper – 1/4 (finely chopped)

Taco seasoning mix – 3 tsp

Garlic clove – 4 (minced)

Onion – 1 (finely chopped)

Tomato – 1 (finely chopped)

  • Chop the yellow, green and red bell pepper into small cubes and keep aside.
  • Chop the onions and keep it separate.
  • In a kadai, add butter and saute minced garlic. Once they turn light brown, add chopped onions and saute till golden brown.

  • Now add the green-yellow-red bell peppers, salt, taco seasoning and mix well.
  • Finally add the chopped tri coloured bell peppers, saute consistently in low flame.
  • Cook until the vegetables are soft. Now the vegetable mixture is ready. You can also add corn kernels in it.

Quesadilla

Quesadilla(Prounouced as Kasadia) is a Mexican cuisine in which the tortilla(tortia) is filled with vegetables and cheese. Tortilla is a thin flatbread made from plain flour / wheat flour / corn flour in Mexico. If you are a non-vegetarian, you can also use meat as a stuffing. I am going to share the recipe for veg- paneer – cheese quesadilla. I came to know about this recipe from my younger brother. When he came for vacation, he made this recipe for us at home. It was so delicious and we all loved this dish. Later I learnt this recipe from my brother and made for my husband too. He too loved it and complimented my brother for introducing me to Mexican cuisine. His friends were also surprised to see a different dish.

INGREDIENTS

Tortillas –  4

Fajita- 1 cup

Paneer – 100 gm (grated)

Mozzarella cheese – 200 gm (grated)

Mayonnaise – To spread

Butter – To cook

Salt – To taste

  • Tortillas can be made at home but today I am going to use the readymade ones, my brother bought for me.

  • Take a tortilla and apply mayonnaise in a semi circle or one half of the tortilla.
  • Spread the mixed vegetables on the half and spread grated paneer and grated cheese. You can add cheese lavishly. This will give quesadilla better taste.

  • Now close this with half of the tortilla and the quesadilla looks like a semi circle.

  • Heat the skillet in medium flame and add dollop of butter. Place the quesadilla on it and cook until it turn golden brown. Cook on both the sides.

  • Cut it into four and serve.

Baked Pasta

As usual I was bored with the regular food and was craving for something yummy and delicious.  I thought of making white sauce pasta and later took it to the next step of baking it. Nowadays I love to bake not only cakes and cookies but also other recipes.  This is the first recipe I tried apart from the above. We had it for the dinner.  The melted cheese in between the pasta gave it an unique taste. Also it is very filling. And it is better to have for the lunch. And yes!!! After a long time I am writing a story for my recipe. My husband is asking me evertime why am I not writing a long story for the recipes. So this story is specially for him.. Krish, hope you are happy now!!!

INGREDIENTS

Pasta – 2 cups

Water  – 3 cups

American Corn – 1/2

Red Bell pepper – 2 tbsp

Yellow Bell Pepper – 2 tbsp

Green Bell Pepper – 2 tbsp

Oil  – 1 tsp

Cheese – To Garnish

White Sauce

Butter – 1 tbsp

Plain flour – 2 tbsp

Milk – 2 cups

Oregano – 1 tsp

Chopped Garlic – 1 tsp

Red Chilli – 1 / Chilli Flakes – 1 tsp

Black Pepper powder – 1/2 tsp

Salt – To taste

Cooking Pasta 

  • Boil the water and add Pasta into it. Add a drop of oil so that they wont stick together.
  • Once the pasta has been cooked, drain the water and keep aside. If you allow the pasta to cook some more time, it will become mushy.

White Sauce

  • Heat the oil in a broad non-stick pan, add  the garlic and sauté on a medium flame for a few seconds.
  • Add the plain flour and cook on a slow flame for a few seconds, while stirring continuously.
  • Add the milk gradually and cook no a medium flame for 3 to 4 minutes or till the sauce is thick, while stirring continuously.

  • Cut the red chilli into small bits so that you can use it as chilli flakes.
  • Add the oregano, chili flakes, cheese, salt and pepper, mix well and cook on a medium flame for 1 minute.

Pasta in White Sauce

  • Heat the oil in a broad non-stick pan, add the sweet corn kernels, Red, Yellow, Green Bell pepper and sauté on a medium flame for 1 to 2 minutes and keep aside.
  • Now add the cooked Pasta and mix it well with the Vegetables.
  • Add half the quantity of white sauce, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  • Keep it aside.

Baking

  • Grease a cake pan.
  • Arrange a layer of cooked white pasta.
  • Now add a layer of prepared white sauce. Spread evenly over the white pasta.
  • Add the grated cheese.
  • Again add a layer of pasta, white sauce and Mozarella cheese. Cover it with the grated cheese.
  • Pre-heat the oven at 200 deg Celsius. And bake it at 150 Deg Celsius until the Mozarella cheese melts an the top layer turns brown.

  • Serve hot.

Calzone

Calzone is an Italian oven baked folded pizza. The stuffing is placed inside the dough and is baked. The vegetarian version has bell peppers, cheese and corn in it. But you can use any filling of your choice. It can be eaten for a relaxed weekend dinner or even as an evening snack. I made this at home and gave it to my neighbour. She just loved it and said it is super yummy.  Yes I too loved it…

INGREDIENTS

Pizza Dough 

All Purpose Flour – 250gms

Sugar – 10 gms

Salt – 5 gms

Dry yeast – 1/4 tsp

Milk powder – 1 tsp

Gluten – 1/2 tbsp

Bread Improver – 2 1/2 tsp

Water – 130 ml

Stuffing

Oil – 1 tbsp

Garlic – 4 flakes

Onion – 1/4 cup

Tomato Puree – 1/2 Pkt

Capsicum- 2 tbsp

Corn- 1/2 cup

Herbs – 1/2 tsp

Chilli flakes – 1/2 tsp

Pepper – 1/8 tsp

Salt – 1/2 tsp

Mozarella Cheese – As req

Method

Dough

  • Add All purpose flour, salt, milk powder, bread improver, gluten and mix well.
  • Add the yeast in warm water and mix well. Also add sugar and dissolve it well.
  • Mix the yeast mixture with rest of the ingredients and knead it well into a smooth dough. The dough will be elastic.
  • If the dough is wet, sprinkle some flour and knead it well.
  • Grease a bowl and place the dough in it, cover it with a cloth and place it in a warm place.
  • Allow it to stand for 30 minutes or until the dough doubled in volume. When you punch the dough, you can feel the air releasing.

Masala

  • Heat oil in a pan and add minced garlic. Saute it in low flame until  you get the aroma.
  • Now add onion, herbs, chilli flakes, tomato puree, salt and sugar.
  • Add finely chopped capsicum, corn and mix well.
  • Saute until it thickens. Turn off the stove and allow it to cool.
  • Allow it to cool.

Steps

  • Roll out the dough into small disc.
  • Put the masala in one end and place the grated cheese on it.
  • Fold it with other end and press the edges well with the fork. So that the filling doesnot come out. Brush the calzones with butter on the top.
  • Pre heat the oven at 200 deg Celsius for 10 minutes. Then arrange the calzones on the greased tray and bake it at 140 degree celsius for 30 minutes.
  • Cut into wedges and serve.

Chilli Babycorn

Indo Chinese cuisine is one of my all time favourites. Whether it is manchurian or fried rice or chilli paneer, chilli babycorn etc are my favourites. For a long time I am searching the difference between Chilli babycorn and Babycorn manchurian. Now I have got an idea and I believe it is right. Babycorn manchurian basically doesnt include capsicum or bell pepper but Chilli babycorn will have green bell pepper in them. And manchurian will have tomato sauce or ketchup whereas chilli recipe doesnt have. But I would like to know the actual difference and I request the readers to help me.

INGREDIENTS

Baby Corn –  1 pkt

For Sauce

Onion – 1 small

Ginger – 1/2 inch finely chopped

Green chillies – 3 slit lengthwise

Garlic – 5 cloves finely chopped

Spring onions – 5, Chopped into small pieces

Capsicum/ Green bell pepper – 1/2 thinly sliced

Soy Sauce – 1 tsp

Corn starch – 1 tsp

Salt – As req

Pepper – 1/4 tsp

Sugar – 1/4 tsp

Oil – To fry

For Batter

All purpose flour – 2 to 3 tbsp

Corn flour – 2 to 3 tbsp

Salt and pepper -As req

Water -to make the batter

Batter
  • Rinse and dry the baby corn with kitchen towels. Chop the baby corn if they are to 1 inch length .
  • Make a smooth paste with the cornflour, all purpose flour (maida), salt, pepper and water.

  • Heat oil on a tava or a frying pan.
  • Dip each baby corn piece in the batter and coat it well with the batter.
  • Fry the baby corn till the edges and sides are golden brown.

Sauce

  • In another pan , heat about 1 tbsp oil.
  • Add chopped onions or spring onions, ginger, garlic and slit green chilies.
  • Stir fry on a medium flame till the onions have become translucent.

  • Add the Capsicum and saute till they are partially cooked.
  • Add the soy sauce and stir well.
  • Now sprinkle black pepper powder, salt and sugar. Add 2 tbsp water and stir.
  • Add the pan fried baby corn and stir well.

  • To give a glaze and smoothness in the dish, sprinkle about 1 tsp of corn flour. mix well and cook for 1-2 minutes or more till the corn flour has cooked.
  • Add salt, pepper or soy sauce if required.

  • Garnish with some spring onions.
  • Serve as a starter or as an accompaniment for Veg fried rice.

Cheese Burst Pizza

Cheese Burst Pizza is offered by Dominos and is demanded by a lot of people. The reason behind this is it has oodles of cheese filled inside the pizza.  I came to know about this pizza through my younger brother. The way he described about this pizza tempted me to taste it once. But we could not make it before my wedding. And after wedding I have asked my husband many times about having this Pizza. But always he smile and denies it diplomatically.  But now I have learnt to make this at home and can make whenever I have a craving for this. For a change, I made this for lunch. And finally my husband too enjoyed it. Now he is also a fan of Pizza..

INGREDIENTS

Dough

All purpose Flour – 1 1/2 cups

Milk – 1 tbsp

Sugar – 1 tsp

Salt – 1/2 tsp+ 1/8 tsp

Oil – 1 tbsp

Water – 1/2 cup

Dry yeast – 1/2 tsp+1/8 tsp (or)

Wet yeast – 1 tsp+1/4 tsp

Pizza sauce

Oil – 1/2 tbsp

Garlic – 4 flakes (minced)

Onion – 1 small size(finely chopped)

Chilli flakes – 1/2 tsp

Mixed Herbs – 1 tsp

Tomato Puree- 1/2 pkt

Sugar – 1 tsp

Salt – 1/4 tsp

Method

Method

  • Divide the dough into two equal portions.
  • Dust the working area and roll out both into 1/4 inch thickness and keep aside.
  • Apply the cheese spread either the plain one or the flavoured one. Apply all over the base leaving 1/2 inch on all the sides.

  • Now  place the second base on top of the first base. Close well on all the sides.
  • The base is ready for topping.
  • Apply pizza sause on the top of the base. Place any vegetables of your choice.
  • Grate the Mozarella cheese all over . Now the pizza is ready to cook.

  • Apply grease on baking tray or pizza plate. Place the pizza on it.
  • Pre-heat the oven at 200 deg Celsius for 3 minutes.
  • Cook at 175 deg Celsius for 25 to 30 minutes.
  • Use top and bottom option in OTG and place in top rack.
  • Now the pizza is ready to serve.
